Hotel Indigo Bangkok introduces new CHAR Bangkok Chef de Cuisine Jimmy Rojas

Born in Mexico, Chef Jimmy has since travelled the world and worked in hotels and resorts as well as Michelin-starred restaurants in 17 countries and counting. 

Hotel Indigo Bangkok Wireless Road announce the appointment of Chef Jaime “Jimmy” Rojas as Chef de Cuisine for CHAR Restaurant and CHAR Rooftop Bar. Also known as CHAR Bangkok, this dining destination spans the top two floors of the hotel and invites guests to enjoy stunning views of Bangkok’s city skyline from both a rooftop bar on the 26th Floor and a contemporary grill on the 25 th Floor with its own private dining space called CHAR Private Dining Room.

Born in Mexico, Chef Jimmy has since travelled the world and worked in hotels and resorts as well as Michelin-starred restaurants in 17 countries and counting. This globe-trotting experience is intertwined in his cooking, and Chef Jimmy is passionate about celebrating each country’s local ingredients while approaching each dish as a chance to create a new variety of flavours. “For me, I want my cuisine to spark connections and conversation. Dining out means that your food is more than just a quick meal, it’s an indulgence and should be a celebration,” he says before adding “I want people to have a bite and think to themselves ‘do I like this or do I love it?’”.

With this in mind, Chef Jimmy has launched an all-new menu for CHAR Restaurant that sees this passion in his CHAR Signature Dishes such as Roasted Pork Belly, first prepared sous-vide for 24 hours and served with creamy polenta, coriander chimichurri and sautéed bok choy. Lobster Rice is another example that seamlessly brings together both European and Asian influences onto one plate, with carnaroli rice prepared with a gochujang sofrito and served with wakame, mussels, edamame, turmeric aioli and the meat of a whole Boston lobster. Regulars at CHAR Restaurant will be pleased that the traditional “Surprise Menu” concept remains, where Chef Jimmy and his team will serve either a 3-course or 5-course meal inspired by the day’s best produce and a healthy dose of creativity. Grill lovers can also satisfy their cravings with a selection of premium beef such as Wagyu Beef Tenderloin, Wood Fired Tomahawk, Fire Grilled Rack of Lamb and more. Even the dessert menu has had an update, with new classics such as Crème Brûlée and Polenta Corncake served with dulce de leche, caramelized bacon and coffee ice cream.

“While our spectacular views remain the same, I am excited for our regulars and new diners at CHAR Restaurant to experience Chef Jimmy’s fresh perspective first-hand and can’t wait to Iaunch our other projects that will mark CHAR Bangkok’s full return to the forefront of Bangkok’s dining scene,” says Jennifer Vivian, General Manager of the hotel. Chef Jimmy’s other upcoming projects include exclusive Chef’s Tasting menus, all-new dining experiences and the launch of CHAR Restaurant’s festive season offers.
