TOKYO – Hotel Chinzanso Tokyo, leading Japanese hospitality company Fujita Kanko Inc.’s flagship hotel, will open a new restaurant, Kinsui Taipei by Hotel Chinzanso Tokyo, in Taiwan on January 21st. Like Kinsui, one of the most highly acclaimed “kaiseki” restaurants in Tokyo, Kinsui Taipei will offer upscale Japanese kaiseki dinners, eight or ten exquisite traditional courses prepared by a master Japanese chef. A large selection of Japanese sake will also be available.
“Although it’s wonderful that Japanese food is loved around the world, sometimes it loses its subtle taste when it’s localized,” said Akira Segawa, Fujita Kanko’s president and CEO. “We will offer truly authentic Japanese cuisine in Taipei, just the way we carefully prepare and serve it at our restaurant in Japan, where food is a big part of our culture and hospitality. We want Taipei diners to taste and experience the heart of Japan at Kinsui Taipei.”
Set course dinners will be offered at three price levels: NT$4,000, NT$5,000 and NT$6,000 (approximately US$120-180). Special appreciation for changing seasons, characteristic in Japanese culture and lifestyle, will be reflected in the restaurant’s cuisine and tableware. New menus will be created every two months, incorporating seasonal themes such as plum blossoms for early spring in January and February and cherry blossoms for March and April, also emphasizing a beautiful presentation.

Diners can watch chefs cooking in an open kitchen. While menus will reflect traditional Kinsui style, they will use local ingredients to maximize freshness. One signature dish will be a lava stone grill from Mt. Fuji. The restaurant will also offer Hotel Chinzanso Tokyo’s famous top-quality service.
