Cases from Brazil, Greece and India will be highlights on the panel “Production Associated to Tourism – Gastronomy”, during the 3rd Annual Summit of the World Tourism Forum for Peace and Sustainable Development, Destinations2006, taking place from 29th November to 2nd December in Porto Alegre.

The Brazilian example is the series of books “Paths of Flavour” (Caminhos do Sabor”), by the gastronomic writer and advisor Rusty Marcellini, who portrays the existing cultural differences within national territory via regional gastronomy. Such is the case, for example, of the “Tropeiros Route”, travelled by Marcellini with the aim of revealing the potential of gastronomic tourism in the region and transform it into a book, already published and on the tourist route.

The 4.000 kilometres of the Tropeiros Route, which connected Viamao in Rio Grande do Sul to Sorocaba in Sao Paulo, were travelled by traders taking their products to be sold in the great markets, so in turn supplying the prosperous gold and diamond region in Minas Gerais.

Another interesting case refers to the Crete Culinary Sanctuaries, in Greece. The programme offers culinary tours coupled with cultural excursions for small groups. Participants discover the secrets of Crete’s nature, culture and cuisine during the visits to tourist spots, organic farms, distant villages, quiet beaches and country walks. The programme seeks to promote and protect the cultural patrimony and natural beauty of Crete by supporting the island’s inhabitants in the active work for the benefit of this cause.

To close the panel, the Spice Circuit in Kerala, India will be presented. With its rich gastronomy, Kerala is one of the country’s favourite destinations and tourism is one of the main sources of income in the region. Its sustainable development is co-ordinated by the Tourism Development Authority, made up of representatives from public and private sectors. The state created legislation for tourist development and is implementing a series of projects focused on environmental conservation, historic preservation, community development and awareness-raising on the importance of sustainable tourism as much for the tourist as for the receiving communities.
