Dale Talde creates Japanese cooking videos highlighting local regions

In the videos, Talde demonstrates to viewers how to use local Japanese ingredients by preparing three unique dishes.

NEW YORK – Japan National Tourism Organization (JNTO) New York Office is launching an online food campaign in collaboration with Chef Dale Taldeto promote travel to Japan’s undiscovered local regions through the creation of unique Japanese dishes. The campaign, which launched recently, features three videos of Talde cooking his original recipes using Japanese food. Viewers are encouraged to vote for their favorite recipe, with the grand prize winner receiving a round-trip coach airfare to Japan for two.

In the videos, Talde demonstrates to viewers how to use local Japanese ingredients by preparing three unique dishes. Using Wagyu beef, native to Miyazaki, he makes Wagyu Beef Skewers with Japanese scallions and sweet potatoes, with a maple syrup-soy sauce glaze. Using bonito flakes, native to Kochi, Talde makes Bonito Spiced Tuna with golden beet dashi and pickled mustard seeds. Using matcha green tea, native to Shizuoka, he makes Tea Steamed Red Snapper with matcha salsa verde and crispy brussel sprouts.

Each prefecture highlighted in the campaign is home to many hidden gems of Japan. Miyazaki, situated in the Kyushu region, which can now be traveled to on a luxurious Seven Stars Cruise Train, is home to the Takachiho Gorge, a V-shaped gorge created by the Gokase River. In Kochi, visitors can peacefully canoe down one of Japan’s most pristine rivers, Shimanto River. In the Obuchi area of Shizuoka, visitors can enjoy a quintessential Japanese scene of vast and vivid green tea fields with the magnificent Mt. Fuji in the background.

Talde, a top contestant on Bravo TV’s cooking competition Top Chef in 2008 and 2010, now owns and runs the popular Talde restaurants in Brooklyn, Miami Beach and Jersey City. After working with chef Morimoto from Iron Chef America, Talde continues to offer creative Asian fusion dishes at his restaurants. In 2015 he published a cookbook titled Asian-American.
