Andaz Singapore introduces Victor Marcato, Food & Beverage Operations Director

Victor joins Andaz Singapore following his most recent role as Assistant Director of Food and Beverage of Grand Hyatt Hong Kong, having scaled the ranks of various operational and management positions under the Hyatt Group.

SINGAPORE – Set to open in October 2017, the new Andaz Singapore is pleased to announce the appointment of Food and Beverage Operations Director, Victor Marcato, who will be responsible for the overall planning and development of the Food and Beverage operations for Mr Stork, 665°F, Alley on 25, Pandan, in-room dining and event services at Andaz Singapore.

Graduating from Ecole hoteliere de Lausanne, Switzerland in 2010 with a bachelor of science degree in Hospitality Management, Victor commenced his career with Hyatt as a Corporate Leadership Trainee – Food & Beverage at the Grand Hyatt Doha in 2010 and brings over seven years of invaluable hospitality and restaurant experience to his new role. Originally from Switzerland, Victor is also fluent in English, French, Italian, German and Spanish.

Victor joins Andaz Singapore following his most recent role as Assistant Director of Food and Beverage of Grand Hyatt Hong Kong, having scaled the ranks of various operational and management positions under the Hyatt Group, including Grissini at Grand Hyatt Hong Kong and Rocca Restaurant & Lounge at Grand Hyatt Doha.

Commenting on his new appointment, Victor says, “I am very excited be part of the pre-opening team that’s launching the first Andaz in Southeast Asia. I can’t wait to introduce the fresh and exciting dining concepts that we have in store and to spice up the vibrant and lively dining scene in the Bras Basah-Bugis district.”

Having previously dabbled in various aspects of hospitality such as Concierge and Housekeeping from the tender age of 15, Victor’s interest in Food & Beverage was ignited after working as a barman in Switzerland during his school days. The experience allowed him to realise that a career in the dining world was his true calling in life.

“Being in Food and Beverage excites me. Dynamic and intense, from the food to the service, everything is in your hands and in that short window of time, you are able to make a difference to your guests’ experience. The intensity is insane at times but I love the challenges that come with it,” says Victor.

As Food and Beverage Operations Director, Victor hopes to develop Andaz Singapore as a destination for unique drinking & dining experiences, and also to stimulate a sense of discovery amongst our guests. By taking on a fresh perspective of our vibrant neighbourhoods in our dining concepts, Andaz Singapore aims to recreate an authentic dining experience up into the sky.

An avid explorer, Victor loves exploring news destinations with his wife in their free time, and his current favourite destination is Japan, as their precision and dedication to their culinary craft never fails to leave him in awe.

Andaz Singapore will bring stimulating new experiences to this internationally acclaimed city, immersing guests in the eclectic districts of Kampong Glam and Bugis. The premium downtown property will offer 342 guestrooms, residential-style event venues with floor-to-ceiling windows and loft kitchens, the only rooftop bar in the downtown area with 360-degree views and a street-dining-in-the-sky food and beverage concept at Alley on 25.
