Seaduction Restaurant + Bar announces new Executive Chef

James Fiske, who brings more than 20 years of experience to the role, said achieving Executive Chef at the premier, hatted Seaduction Restaurant + Bar is a career highlight

Seaduction Restaurant + Bar, located at Peppers Soul Surfers Paradise, has appointed celebrated chef James Fiske, formerly of Michelin starred establishments across the UK and Europe and the Gold Coast’s Vanitas at Palazzo Versace, as Executive Chef.
 
James, who brings more than 20 years of experience to the role, said achieving Executive Chef at the premier, hatted Seaduction Restaurant + Bar is a career highlight and one which has enabled him to create a bespoke menu that celebrates his international culinary practices.
 
“I’ve drawn on my English heritage and transformative experience throughout Europe to create a new modern and dynamic European menu with Australian influences to perfectly complement the Seaduction Restaurant + Bar setting,” James said.
 
Fusing earth and sea and bursting with fresh local produce, the menu features exquisite combinations of taste and texture, and changes seasonally according to the finest and freshest available product on offer from niche providers around the country.
 
Highlights from the current ‘Earth, Water, Foliage and Vines’ dinner menu include a heirloom beetroot salad with goats curd, orange and nasturtium (entrée), King George whiting with scallop, crab, cucumber and sea herbs (main) and Valrhona chocolate, matcha tea and salted caramel (dessert). 
 
Peppers Soul Surfers Paradise General Manager Rob Everett said James’ experience in the world’s finest restaurants, combined with his natural artistic flair, is an asset at the iconic restaurant and bar.
 
“The technically brilliant and internationally influenced flavours created by James and his talented team are proving to be a strong drawcard for both local and visiting guests,” Rob said.
 
The beachfront restaurant, which includes a contemporary bar and an unashamedly opulent private dining room with a wine cellar, is located on level two of Peppers Soul Surfers Paradise on the Gold Coast and is open for breakfast daily, lunch (Tuesday to Sunday) and dinner (Tuesday to Saturday).
  
In addition to Seaduction Restaurant + Bar, James is also responsible for all food and beverage services within Peppers Soul Surfers Paradise, including conferencing and events and in-room dining services at the hotel.
