Crown Perth receives international recognition for Food Safety Management

Crown Perth has been awarded the internationally recognised certification ISO 22000 and 3rd Party HACCP standard by the BSI Group for its Food Safety Management Systems, meaning that the resort has gained one of the highest food standard credentials in the country and is the only casino complex of its kind in Australia to achieve the standard as a property that combines Gaming, Hotels and VIP restaurants as well as Banqueting and Convention activities.

Crown Perth has been awarded the internationally recognised certification ISO 22000 and 3rd Party HACCP standard by the BSI Group for its Food Safety Management Systems, meaning that the resort has gained one of the highest food standard credentials in the country and is the only casino complex of its kind in Australia to achieve the standard as a property that combines Gaming, Hotels and VIP restaurants as well as Banqueting and Convention activities.

ISO 22000 is an international, generic Food Safety Management System standard that defines a set of general food safety requirements applying to all organisations in the food chain. To qualify for this standard, Crown Perth has been required to establish a successful Food Safety Management System with policies and procedures in place to ensure the safety of its food products.

The resort’s restaurants deliver over 10,000 meals every day, and the very highest standards are employed, beginning with the order, then delivery by the supplier, storage, internal delivery to all kitchens, food preparation, production and service and then the removal and recycling of relevant waste. All areas of the business were involved in gaining this accolade with Banqueting (Conventions) and all retail restaurants (Hotels, VIP and Gaming) and the Staff Dining Room coming under close scrutiny by the auditor who was onsite for five days during November last year.

The project was championed by Crown Perth’s Executive Chef Ralf Vogt who had prior experience in achieving the same certification in Sri Lanka, together with the support from his Chief Steward Sean McNamara and his Executive Sous Chefs Michael Wilcox, Jochen Beranek and Sean Marco although the process to accreditation involved teams responsible for cleaning and maintenance in all kitchens and food preparation areas, general maintenance teams and lastly the Purchasing and Supply team, who were integral to the program’s success. An independent Food Safety consultant also worked alongside the team in areas such as Food Safety documentation, kitchen audit, liaison and verification checks such as microbiological sampling.
